1/4 cup cooked millet Natural Life
1 large tomato chopped into small cubes
2 or 3 small cucumbers, chopped into small cubes
1 small yellow onion, chopped finely
1 cup roughly chopped parsley
5 mint leaves, roughly chopped (can make without, just add more parsley)
3 Tablespoons extra virgin olive oil
3 Tablespoons lemon juice
sea salt and freshly cracked pepper
1 cup chicken or vegetable broth, to cook the millet
We cook 1/2 cup raw millet in 1 cup of chicken or vegetable broth and we allow to cool.
We prepare our vegetables as listed by chopping into small cubes or roughly chopping, combine with the cooked millet in a bowl and mix.
We salt to taste, add the pepper and allow to sit for about an hour before serving or until flavors and aromas are combined.
Our delicious Millet Tabbouleh is ready to serve!
