1 cup white quinoa
2 cups pomegranate
½ bunch arugula
½ bunch of fresh coriander
2 table spoons olive oil
1 table spoon honey
Juice from 1 lemon
Seeds (pumpkin Seeds, sunflower seeds etc) – optional
Wash the quinoa 2- 3 times with cool water. Add the quinoa in a pod with 1 1/2 cups of water and boil (medium heat). Once the quinoa is ready remove the pod from the fire and let it cool.
Add the quinoa in a large bowl and then add the rest of the ingredients starting from the arugula, coriander, pomegranate and then the olive oil, the lemon and the honey. Season with salt and pepper. You can also add seeds in your salad such as pumpkin seeds or sunflower seeds.
Leave the salad in the fridge for at least 2 hours before serving.
