Arugula salad with pumpkin seeds
Ingredients
For the salad
4-5 cups arugula
1 cup cherry tomatoes, halved
1 cup corn (we used frozen, thawed)
1/4 cup red onion, thinly sliced
1 avocado, sliced
1/4 cup Pumpkin seeds Natural Life
For the dressing
Juice from 1 1/2 lemons
3 Tablespoons olive oil
1 Tablespoon honey
Pinch of Pink Himalayan salt Natural Life
Instructions
For the salad:
Add all the ingredients to a large mixing bowl.
For the dressing:
In a small jar, add all the dressing ingredients. Cover and shake to mix them up. Pour over the salad and toss.
Serves 2-3 servings
