Cyprus Fava Soup


  • 250g Cyprus fava ( louvana )
  • ¾ cup of medium grain rice
  • 1 chopped potato
  • 3 chopped onions
  • ¼ cup olive oil
  • ½ glass of lemon juice
  • 11 glass of water
  • Salt
  • 1 teaspoon black pepper


Preparation Method

Clean and wash the fava. Place the fava and the water in to boil. Remove the foam and add rice, chopped potato when it boils. Stir to prevent sticking and let it cook well enough till the potato and rice melt.

Then fry the chopped onion in olive oil and let it wither.

Add onion with olive oil, salt, pepper, lemon juice and let it boil for some minutes more.
