Healthy Christmas Bites
It’s beginning to look a lot like Christmas with these healthy Christmas pudding bites topped with cashew cream!
Healthy Christmas pudding bites
INGREDIENTS
½ cup dried cranberries
½ cup dried apricots
½ cup sultanas
1 cup hazelnuts
½ cup almonds
Juice from half of orange
Zest from half of orange
1 tsp Natural Life cinnamon
½ tsp Natural Life ground clove
Pinch of Natural Life nutmeg
Cashew cream ingredients
½ cup cashews, soaked for at least 4 hours or overnight
1 tbsp rice syrup or any other liquid sweetener
¼ cup almond milk or any other plant based milk
½ tsp vanilla extract
INSTRUCTIONS
Place hazelnuts and almonds in your food processor and pulse few times
Add the rest of the ingredients and pulse until the mixture comes together.
If you need more liquid for the mixture to come together you may add a bit more of the freshly squeezed orange juice.
Form bites/ balls with the mixture and place in the fridge to set
In the meantime make the cashew cream by draining the cashews and popping them in the processor together with the remaining ingredients.
Blend until completely smooth.
Add more milk if needed
Final steps is spreading the cashew cream on each bite and decorating with pomegranate seeds, cranberries or red currants.
