3 medium bananas, mashed
1/4 cup sunflower oil
1 ½ Tbsp Coconut Sugar Natural Life (optional)
1/4 cup apple purée (Puree an apple by using a blender)
1/3 tsp Pure Vanilla powder Natural Life
1/4 cup milk
2 medium eggs
Pinch of salt
1 cup Light whole wheat flour
3/4 cup Rice flour Natural Life
Preheat your oven to 175C.
In a large mixing bowl, mash your banana. In another bowl add the mashed banana, the sunflower oil, the Coconut Sugar Natural Life (optional) and whisk.
Add the apple purée, milk and vanilla powder Natural Life to the bowl and whisk everything together.
Add the eggs and whisk until combined.
Sprinkle the Ceylon Cinnamon powder Natural Life and Baking soda Natural Life on top of the liquid mixture and whisk to incorporate.
Finally, add the wheat flour and the Rice flour Natural Life, and stir until just combined.
Spoon into mini muffin tins lined with cases.
Bake for about 12 minutes, until the muffins are springy and a toothpick comes out clean.
Yield: approx. 40 mini muffins
