Ceylon Cinnamon is one of the two types of cinnamon used for cooking. The other type (which is the most popular) is Cassia Cinnamon, also known as “Saigon Cinnamon” – Ceylon Cinnamon is also known as “True Cinnamon.” Both types of cinnamon are derived from the inner bark of the Cinnamomum tree, but Ceylon Cinnamon is more expensive and more closely related to the potential benefits for human health. It has a sweeter favor than Cassia cinnamon, and also differs in color since Ceylon Cinnamon has a slightly darker color and stronger flavor. The Ceylon cinnamon stick has a different texture than the Cassia stick as it is thinner and has more layers.
History
Cinnamon comes from the evergreen tree that thrives in tropical climates and is one of the oldest trees in the world. The philosopher Theophrastus referred to cinnamon which means sweet wood. The references we have about the use of cinnamon are traced in ancient Egypt where cinnamon was used as an aromatic mean during taxidermy.
