Recipe for traditional Fava Beans with Caramelized Onions and Fried Capers

INGREDIENTS

250 gr fava beans

3 onions

1/2 litre of hot water

1 tablespoon thyme honey

Olive oil

Salt

Pepper

INSTRUCTIONS

In a small saucepan add the hot water with the fava beans and a peeled onion.

Simmer without a lid for 40 minutes and at the same time remove the foam that will be created on the surface.

Add a little salt and pepper, try and correct if necessary.

Tip: if we see that it dries and needs liquids, add some hot water.

Once the fava softens it will start to melt and coagulate. Remove from the heat and pour into a blender, along with the onion and 3 tablespoons olive oil.

Beat well for a few minutes, until you get a velvety fava.

In a non-stick pan add 1/4 of a cup of olive oil and heat over medium heat.

Peel the onions, cut them into slices and add them to the pan. Cook for 20 -25 minutes, stirring regularly until they turn brown and caramelize. Finally add the honey and stir lightly for another 5 minutes.

At the same time, in a small frying pan, add 1 tablespoon of olive oil and sauté the capers for a few minutes.

Serve the fava with the caramelized onions and the fried capers together with plenty of olive oil on top.
