Summer salad with lentils


500 gr. Natural Life lentils

1 fresh onion

2 peppers diced

½ bunch of fresh coriander

½ bunch of fresh dill

1 carrot

10 cherry tomatoes cut in half

1 chopped garlic clove

6 teaspoons olive oil

6 vinegar



Boil the lentils in salted water (for 20-25 minutes) until they soften a bit but still hold their shape. Strain them and let them cool a bit.

Put them in a bowl and mix them with the onion, peppers, carrot and chopped herbs. Add the arugula and the cherry tomatoes, the garlic and pour over the salad with the vinegar and olive oil. Add salt and serve with fresh mint and basil on top.
