Valentine’s Day Cookies
Ingredients:
- 1 cup (200g) butter
- 1.5 cups (180g) Natural Life icing sugar
- 2 tsp vanilla extract
- 2 tbsp Natural Life cornflour
- 0.5 tsp Natural Life salt
- 3 cups (480g) Natural Life rice flour
- 0.5 cup (120ml) water
- Strawberry jam
Instructions:
- In a bowl, beat the butter and icing sugar. Add the vanilla, cornflour, and salt, and mix well.
Finally, add the rice flour and water, and stir until the ingredients are fully combined. - Knead the dough with your hands until it comes together, then divide it into two portions.
Wrap each portion in cling film and refrigerate for about an hour, until firm. - Preheat the oven to 170°C.
- Roll out the dough on a lightly floured surface (use rice flour).
- Use a cookie cutter or a glass to cut the dough into round biscuits.
- Transfer them to a baking tray lined with baking paper.
- From half of the biscuits you have cut, use a small heart-shaped cutter to make a hole in the centre
(this will allow the jam to show through when assembling them later). - Bake for 10 to 12 minutes. (These biscuits should remain pale after baking.)
- Once baked, transfer them to a wire rack and allow them to cool completely.
- Once cooled, spread a little strawberry jam over one biscuit and place a biscuit with the
heart-shaped hole on top, forming a “sandwich”. - Dust the biscuits with icing sugar.
- Allow the biscuits to set with the jam, then enjoy!
