Vegetable Meatballs with Quinoa
Ingredients
- 1 cup Natural Life White Quinoa
- 1 cup mushrooms (chopped)
- 1 zucchini (grated, drained)
- 1 carrot (grated)
- 1 onion (finely chopped)
- 1 tablespoon coriander (grated)
- 1 garlic clove (pressed)
- 1 egg
- 3 tablespoons Natural Life Maize Starch
- 2 tablespoons Spearmint (finely chopped)
- A little olive oil
- Natural Life Salt, & pepper
Instructions:
- Soak Natural Life Quinoa in water for 5-10 minutes, drain and then boil in a saucepan with plenty of water, over medium heat for 15 minutes. Drain and set aside.
- In a frying pan, heat a little olive oil and sauté the onion, garlic, coriander and freshly ground salt and pepper over medium heat.
- Then add the mushrooms, zucchini, carrot, and stir, until slightly wilted, about 5 minutes.
- Remove from heat, add mint, and set aside to cool.
- Once they are cool enough, transfer the vegetables to a bowl, add the quinoa, egg, maize starch, and mix well until homogenized.
- Heat a little olive oil in a non-stick frying pan, shape wide meatballs, and cook them over medium heat until golden brown (3-4 minutes on each side).
- Once cooked, put them on absorbent paper to drain the excess oil and they are ready!
