Vegetable Meatballs with Quinoa


  • 1 cup Natural Life White Quinoa
  • 1 cup mushrooms (chopped)
  • 1 zucchini (grated, drained)
  • 1 carrot (grated)
  • 1 onion (finely chopped)
  • 1 tablespoon coriander (grated)
  • 1 garlic clove (pressed)
  • 1 egg
  • 3 tablespoons Natural Life Maize Starch
  • 2 tablespoons Spearmint (finely chopped)
  • A little olive oil
  • Natural Life Salt, & pepper


  1. Soak Natural Life Quinoa in water for 5-10 minutes, drain and then boil in a saucepan with plenty of water, over medium heat for 15 minutes. Drain and set aside.
  2. In a frying pan, heat a little olive oil and sauté the onion, garlic, coriander and freshly ground salt and pepper over medium heat.
  3. Then add the mushrooms, zucchini, carrot, and stir, until slightly wilted, about 5 minutes.
  4. Remove from heat, add mint, and set aside to cool.
  5. Once they are cool enough, transfer the vegetables to a bowl, add the quinoa, egg, maize starch, and mix well until homogenized.
  6. Heat a little olive oil in a non-stick frying pan, shape wide meatballs, and cook them over medium heat until golden brown (3-4 minutes on each side).
  7. Once cooked, put them on absorbent paper to drain the excess oil and they are ready!
