White Bean Mushroom Stew

Ingredients:

  • White beans Natural Life
  • Baby potatoes (quantity to your liking)
  • 3 tbsp vegan butter
  • 1 medium onion
  • 1kg mushrooms, sliced
  • 3/4 tsp Natural Life thyme
  • 3/4 tsp Natural Life rosemary
  • 3/4 tsp Natural Life sea salt
  • 3/4 tsp Natural Life pepper
  • 4 cloves of garlic
  • 2 tbsp all-purpose flour
  • 2 tbsp soy sauce
  • 1 tbsp mustard
  • 3 cups vegetable broth
  • 2 cups almond milk

Instructions:

  • Add the vegan butter to a saucepan over medium heat. Once the butter has melted, add the onion and saute.
  • Then add the mushrooms, thyme, rosemary, salt and pepper. Cook for 7-10 minutes.
  • Add the garlic and cook for another minute.
  • Then add the all-purpose flour and mix until the vegetables are coated.
  • Then add the soy sauce and mustard and mix again.
  • Add the vegetable broth and potatoes and simmer for 15-20 minutes.
  • Pour in the beans and almond milk and simmer for another 10-15 minutes.
  • Serve hot and sprinkle with black pepper.
