Quinoa salad with Super-foods
Ingredients
2 cups of boiled Natural Life quinoa
1 ripe mango (cut in squares)
1 ripe avocado (cut in squares)
1 green apple with the skin (cut in thin slices)
150 grams tender spinach leaves
Leaves of fresh mint
2 grinded carrots
2 tablespoons raisins
2 tablespoons cranberry
2 tablespoons Natural Life pumpkin seeds
2 tablespoons Natural Life flaxseed
For the dressing
1/3 cup olive oil
1 juicy orange (juice and zest)
Juice from 1/2 lemon
1 teaspoon mustard paste
1 teaspoon honey
Salt
Pepper
Instructions
First we add all the sauce ingredients into the blender and we grind until it becomes smooth.
We wash the quinoa thoroughly and then we put it in a pot. We add salt, water until our quinoa is covered and we boil for around 15 minutes in low heat. We strain and let it cool.
We add our quinoa, all of our vegetables, fruits and seeds into a bowl and we top with our sauce.
